This Pimento Grilled Cheese Sandwich is a bold, creamy twist on a classic favorite. Made with shredded sharp cheddar, Greek yogurt, mayo, roasted red peppers, and chipotle in adobo, it's grilled to perfection between buttery slices of potato bread. Perfect for spice lovers and comfort food fans alike!

Ingredients
- 3 cups sharp cheddar cheese, shredded
- 1/4 cup Greek yogurt
- 1/4 cup of mayonnaise
- ½ cup of roasted red bell peppers drained and diced
- 2 tbsp chipotle peppers in adobo, chopped
- 1 teaspoon smoked chipotle paprika or smoked paprika
- Salt, pepper, garlic salt to taste
- 1 lb loaf of potato bread, sliced
- Butter
Preparation
- Mix all ingredients with a spatula, (except the butter and bread) until well combined.
- Butter both sides of the bread and apply a generous amount of the pimento cheese. Top with a second bread slice.
- Grilled on a non-stick pan on medium heat about 4 minutes per side or until cheese is melted. Don’t rush it!
Notes:
Add 1/2 cup cream cheese or more shredded cheddar if you prefer a thicker consistency.
