Bring the magic of a campfire treat to your dessert table with this decadent Adventurefuls S’mores Mousse. Featuring a crushed cookie crust made from Girl Scout Adventurefuls, a silky chocolate mousse with a hint of coffee, and fluffy whipped cream topped with torched marshmallows, each spoonful is an indulgent, crowd-pleasing favorite. Serve chilled in small cups or jars for the ultimate sweet escape.

Ingredients
For the crust:
- 2 cups Adventurefuls, crushed
- 2 tbsp butter, melted
For the Whipped Cream:
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
For the mousse:
- 2 cups heavy whipping cream
- 2 cups semisweet chocolate chips
- 1 tbsp instant coffee, dissolved in 1 tbsp of lukewarm water
- 4 large marshmallows, torched
Preparation
- For the Chocolate Mousse, beat heavy whipping cream until stiff peaks form, 3 to 4 minutes. Place chocolate chips in the microwave and heat until chocolate has fully melted. Add instant coffee to the melted chocolate and mix. Gently fold chocolate into the whipped cream, mixing it until incorporated (a Refrigerate for at least two hours or until firm.
- For the crust, using a food processor, pulse Adventurefuls cookies until finely crushed. Drizzle with melted butter and pulse a few extra times. Set aside.
- For the Whipped Cream, beat heavy whipping cream to form stiff peaks, about 4 minutes. Add powdered sugar and vanilla extract and beat to combine, about 30 seconds. Set aside.
- To assemble, top each Adventurefuls cracker crust-filled cup with chocolate mousse, then a scoop whipped cream and garnish with torched marshmallow. Serve cold.
